Quinoa porridge

As I said last week I am looking at changing up my breakfasts a bit and not relying on cooked breakfasts 4-6 per week. I then remembered this recipe for quina porridge which was absolutely lovely and I can’t believe I haven’t had it for so long. Its very filling and the quinoa is free on green and extra easy days, leaving you to have your healthy extra B for something else!

QUINOA PORRIDGE
Serves 2

• 90g of dried quinoa.
• 1 Satchet of Options hot chocolate (white chocolate is amazing) (2 syns so 1 syn per portion)
• Water
• Sweetner
• Dried ginger

Make sure you rinse the quinoa really well under cold running water or it tastes horrible when cooked.

Put in a pan with 1 cup of boiling water (should be cooked in 1:2 ratio of quinoa to water), put in a tsp of ginger powder and a sachet of white choc options. Let it boil up and simmer until the water has evaporated and it should be soft and fluffy.

I live it to cool and put in the fridge to grab in the morning. Chopped some banana or other fruit and mixed through. It makes 2 portions at 1 syn each.
