my breakfast version of Huevos rancheros

This was absolutely lush!

serves 1 – free on EE, Original or Green days

Put a small tin of chopped tomatoes into a shallow baking dish. Add sliced mushrooms and red peppers. Crack two eggs on the top of this mixture. You can add some chilli flakes, black pepper and herbs if you want.

Bake for about 15-20 minutes depending on how well done you like your eggs.

You can add some chopped bacon to this as well if you want (only free on EE and original days).

I had mine this morning with 2 slices of WM toast (from 400g loaf) with spread (which I synned of course) LOL!
